Vegan Meatball Sub

New York's iconic meatball sub, made entirely plant-based with VitaVegantis Swedish Meatballs, homemade marinara and melting vegan mozzarella.

The meatball sub is one of the best-loved street sandwiches of Italian-American cooking: crisp bread, meatballs simmered in sauce and a blanket of melting cheese. In this version the meatballs are VitaVegantis Plant-Based Swedish Meatballs and the cheese is vegan mozzarella. We've written the marinara out separately; make it once and it will cover both the sandwich and a bowl of pasta.

1. Marinara Sauce

Makes about 2 cups — enough for the sandwiches and the little bowl served alongside.

Marinara Sauce

Ingredients

  • 2 tbsp olive oil
  • 1 small onion, very finely chopped
  • 3 garlic cloves, crushed
  • 1 tbsp tomato paste
  • 400 g tinned chopped tomatoes (or 4 ripe tomatoes, grated)
  • 1 tsp dried oregano
  • 1 tsp sugar
  • A handful of fresh basil, chopped (or 1 tsp dried basil)
  • ½ tsp chilli flakes
  • Salt and black pepper

Method

  1. 1.Heat the olive oil over medium heat and soften the onion for 4-5 minutes. Add the garlic and cook for 1 minute more.
  2. 2.Stir in the tomato paste and cook for 1 minute to open up its aroma.
  3. 3.Add the tomatoes, oregano, sugar and chilli flakes. Once it comes to the boil, lower the heat and simmer with the lid ajar for 15 minutes, until thickened.
  4. 4.Take off the heat, stir through the basil and season with salt and pepper. For a smooth sauce, blitz briefly with a stick blender.

2. The Sandwich

The meatballs finish in the sauce, the garlic-oiled bread crisps in the oven and vegan mozzarella melts over the top.

The Sandwich

Ingredients

  • 8 VitaVegantis Plant-Based Swedish Meatballs
  • 2 sub rolls (baguette style, 20-25 cm)
  • 1½ cups marinara sauce (from the recipe above)
  • 1 cup vegan mozzarella, grated
  • 2 tbsp olive oil
  • 1 garlic clove, grated
  • A handful of fresh parsley, chopped
  • Salt and black pepper

Method

  1. 1.Heat the oven to 220°C (with the grill on if you have one).
  2. 2.Cook the VitaVegantis Plant-Based Swedish Meatballs in a pan with 1 tbsp of olive oil for 5-6 minutes, turning until browned all over.
  3. 3.Pour over 1 cup of the marinara sauce and leave on low heat for 5 minutes, until the meatballs take up the sauce.
  4. 4.Split the rolls along the top without cutting all the way through. Mix the remaining olive oil with the grated garlic and brush it over the cut surfaces. Toast in the oven for 3-4 minutes, until the edges turn golden.
  5. 5.Place 4 meatballs with their sauce into each roll, then spoon over the remaining sauce.
  6. 6.Scatter the vegan mozzarella generously on top. Bake on the oven's top shelf for 4-5 minutes, until the cheese melts and puffs slightly. It can catch quickly, so keep an eye on it.
  7. 7.Scatter the fresh parsley over as soon as it comes out. Serve hot, with a small bowl of extra marinara alongside.
