1. Marinara Sauce
Makes about 2 cups — enough for the sandwiches and the little bowl served alongside.

Ingredients
- 2 tbsp olive oil
- 1 small onion, very finely chopped
- 3 garlic cloves, crushed
- 1 tbsp tomato paste
- 400 g tinned chopped tomatoes (or 4 ripe tomatoes, grated)
- 1 tsp dried oregano
- 1 tsp sugar
- A handful of fresh basil, chopped (or 1 tsp dried basil)
- ½ tsp chilli flakes
- Salt and black pepper
Method
- 1.Heat the olive oil over medium heat and soften the onion for 4-5 minutes. Add the garlic and cook for 1 minute more.
- 2.Stir in the tomato paste and cook for 1 minute to open up its aroma.
- 3.Add the tomatoes, oregano, sugar and chilli flakes. Once it comes to the boil, lower the heat and simmer with the lid ajar for 15 minutes, until thickened.
- 4.Take off the heat, stir through the basil and season with salt and pepper. For a smooth sauce, blitz briefly with a stick blender.
